Funny how things work out; a failed staff night out (everyone was busy) turned into cooking lessons!
My lovely friend from work took pity on me a few days ago as I’d gotten all ready for a night out for everyone to cancel. So she picked me up and we, along with her husband, went to IGA (a fancy supermarket over here) to get some ingredients for dinner. She said I could choose what we were having and homemade Gnocchi immediately came to mind. We wandered around the shop and got all the ingredients, along with some essential beers and then went to her apartment.
I was the first guest over as they had just moved in and it was gorgeous! Very modern and they had made it their own with little nick nacks.
We drank, chatted and laughed – then got super hungry so started making the Gnocchi.
We altered the recipe a little bit but here’s what we were working from:
For the gnocchi (serves four):
- 2 large potatoes
- 1 egg
- 200g flour
For the sauce:
- 100g blue cheese
- 100ml cream
- 6 cloves of garlic
- Knob of butter
- 10g Mixed herbs
- Mozzarella to top it all off
We began making the gnocchi by boiling the potatoes for around 15 minutes until the were soft but not really mushy.
*Top Tip: My friend cut a line along the circumference of the potatoes before boiling, which made it so easy to peel once cooked.*
We then mashed the potatoes as finely as we could and then made a hole in the middle of the mix. We cracked the egg into that space and whisked everything together. Then we gradually added the flour until it became a dough like consistency.
Time for rolling! First we floured our work bench. Then we cut the dough ball into four quarters and rolled each quarter into a long thin sausage shape. Then we cut along to make small rectangles. Once cut, you can roll the gnocchi along a fork to make it fancy but we went for a simple oval shape.

Once they were all made, we popped them into salted boiling water. You know when they’re ready when they float to the top. And just scoop them out with a spoon with slits in it. Then leave them to the side.
Next up, the sauce! Mince the garlic and add to a pan with the butter for two minutes. Then pour in the cream, blue cheese and herbs. Stir until the cheese melts completely and the sauce thickens.
*Third Top Tip: if the sauce doesn’t thicken, simply mix a bit of flour and butter together (no more than the size of a teaspoon) and pop it in the pan. The mini roux you just made should enable the sauce to thicken quickly.*
Once the sauce is at the consistency you prefer, mix with the gnocchi in an oven safe tin.
Sprinkle some mozzarella on top of the mix and put under the grill for a minute or two. Keep watching until the cheese goes all bubbly.
Then it’s ready! Sit down and tuck in to this amazing meal.
